How a cream charger works
A whipped-cream dispenser holds cream (or any liquid you want to aerate). When you charge it, N2O dissolves into the fat under pressure; when you press the lever, the gas expands as it leaves the nozzle and whips the cream into a stable foam. N2O is used instead of CO2 because it doesn’t add a sour, carbonated taste.
