Nitro Cold Brew at Home: The Nitrogen Setup That Actually Works

That cascading, creamy nitro pour from the coffee shop comes down to one thing: pure nitrogen gas forced into cold brew at pressure. Here’s the simplest path to doing it at home, and the mistakes that ruin the first attempt.
Nitrogen (N2) vs nitrous oxide (N2O) — not the same gas
This is the #1 mix-up:
- Nitrogen (N2) barely dissolves in liquid. It forms the tiny, stable bubbles that create the cascade and the Guinness-style head. This is what nitro coffee uses.
- Nitrous oxide (N2O) dissolves readily and whips — it’s for whipped cream dispensers, not nitro pours. Charging coffee with N2O makes a slightly sweet, flat-foamed drink, not a cascade.
If your “nitro” tastes off and the head collapses fast, you probably used cream chargers. You want 16g nitrogen cartridges instead.
Two ways to make it
1. Nitro dispenser (easiest, ~$60–120)
A nitro coffee dispenser looks like a whipped-cream dispenser but with a pressure-release pour spout. Fill with cold brew, charge with one or two N2 cartridges, shake hard 20–30 seconds, chill, and pour.
- Pros: cheap, counter-top size, ready in minutes
- Cons: 1L at a time, pour quality varies with shake effort
2. Mini keg with stout faucet (the real thing, ~$250+)
A 64–128oz keg, a nitrogen regulator, and a stout creamer faucet with a restrictor plate. Charge to ~35–45 PSI and let it sit 12–24 hours. This is the closest to a coffee-shop pour.
- Pros: true cascading pour, holds carbonation for weeks
- Cons: cost, fridge space
The recipe that works
- Brew cold brew concentrate (1:5 coffee-to-water, 16–18 hours in the fridge), then dilute to taste — nitro mutes acidity, so go slightly stronger than you’d drink flat.
- Chill completely. Nitrogen infuses poorly into warm liquid.
- Charge with N2, shake (dispenser) or pressurize and wait (keg).
- Pour hard into the glass — the agitation triggers the cascade.
